Cajun Chicken With Creamy Avocado Pasta

Avocado Sauce

  • 3 medium sized Avocados, peeled and pitted
  • 1/2 cup Cilantro Leaves
  • 2 cloves of Garlic
  • 3 tablespoons Lemon Juice
  • 1/4 cup Soaked Cashews
  • 1/4 cup Avocado Oil
  • 1/4 cup Vegan Milk
  • Salt And Pepper to Taste

Cajun Chicken

  • 2 large Boneless Chicken Breasts
  • 1 tablespoon Ketchup
  • 1.5 tbsp Cajun Seasoning
  • 1 teaspoon Italian Seasoning
  • 1/3 cup Oil
  • 3 tablespoons Vinegar
  • Salt And Pepper to Taste

Pasta

  • 1 lb Modern Table Spiral pasta
  • 3/4 cup Cherry Tomatoes, sliced
  • 3/4 cup Canned Corn kernels, drained and washed
  • 2 tablespoons Oil
  • Salt And Pepper to Taste

Avocado Sauce

  1. To make the avocado sauce, blend all the ingredients listed under 'avocado sauce' in a blender or a food processor until it reaches a smooth consistency.
  2. Set aside and save.
  3. Note: Add an extra tablespoon of milk if the sauce is too thick.

Chicken Prep

  1. Assemble all the spices for chicken. Mix to combine.
  2. Wash and clean chicken breasts. Rub this Cajun spice mix over the chicken until chicken is well covered in the spice mix.
  3. Bake the chicken in a preheated oven (350 degrees F) for 20 minutes or until done.

Pasta Preparation

  1. Boil Modern Table Spiral pasta as per package instructions. Once done, drain the pasta and transfer it to a bowl.
  2. Sprinkle pasta with salt and pepper, then toss to combine.
  3. Add corn kernels and sliced Cherry Tomatoes.
  4. Pour a generous amount of the avocado sauce over the pasta. Be sure to add the drained pasta and veggies instantly to the sauce, otherwise, it will not coat well.
  5. Toss to combine, then transfer tossed pasta to a serving bowl.
  6. Top with grilled Cajun Chicken and cilantro leaves, and enjoy!
